Not every family pays by card. From Money → Billing → Take a payment, record a cash or check payment against the student and program.

• Manual/offline members show up in Upcoming Charges with a billing tag, so you don't have to track them in your head.
• They can get automatic renewal reminders before each term.
• Their full history sits in the same invoice list as card payments.

For a member who pays in person, you can leave autopay off and just record each payment as it comes in.
